Hacking Notes app default fonts on macos

So here is the thing...I know that the recent updates in Catalina have completely removed the ability for users to have access to change default fonts in the notes app. I jus there has to be a hack somewhere, so I've searched and searched on and on, but nothing out there. Even accessing the resources folder within the app itself doesn't yield any result, because apple has completely hidden the fonts file. There's no other notes alternative that I like out there, even after heavy research, I still resort to notes app. It is annoying to change the fonts on each and every single note all the time. Tried Automator, still couldn't figure it out because it keeps changing the same note all over again, and not different notes in the list.

Any suggestions guys?
