Server time mismatch Response Header time

I have a strange issue that the time in the response header is 2 hours behind. I have started the question at Laracasts, but feel it might be something else than just Laravel that's the issue: https://laracasts.com/discuss/channels/laravel/auth-in-listener-not-remembered-in-edge

The problem is that the sessions are reset on every request in Edge making it impossible for Edge users to login. Everything works fine in IE, Chrome and Firefox.

The site runs on a certificate from Let's Encrypt, if that has anything to do with the wrong time, I don't know. It's backed up by Apache and PHP and runs on Laravel.

If the wrong response time has anything to do at all, I am not sure about, but my assumption is that it has.
