If I can use real data, or at least realistic data, then I'll use that. But if not, or if I'm just in a hurry, I'll throw in Hipster Ipsum or Bogan Ipsum, etc; although they can include a few words that aren't really ok for work, so if I want to be really sure I use my own stock of joke latin.
Nostalgia? You can try all kinds of random text generators out here, but Lorem Ipsum seems more "noble".

I try to avoid lorem ipsum as it is, I prefer using the variants like samuel l ipsum, delorean ipsum, zombie ipsum and so just because those are 'real' texts and can approach a kind of real scenario. But for big companies presentations and formal ones I just can't and cannot use any kind of regular text 'cause they will think that's the real text, I know that's stupid but that's how big companies work.
From design, UX and testing (especially any presentation for customer) point of view - use real texts in required languages.
In PHP there is a faker library which allows you to generate random texts in many languages.
You also can google for certain topic and find some paragraphs suitable for your needs.
If you need a fast dev/test example for yourself then Lorem Ipsum is ok.
