When you "watch" a post you get notifications (Hashnode Bell, Email, or Push Notification) for new answers/comments.
Do you think it would be useful to automatically watch a post, whenever you participate in it, to keep track of all the latest discussions?

I don't wanna get spammed with the facebook style crap that seems to be the norm "your friend has posted for the first time in a while". Seriously??? I don't care. I would hate to see the same kind annoyances @ hashnode too.
As long as there is a way to default to manual if desired and a way to turn off automatic once it's started.

Automatic watching would be better default behavior. It fits a familiar pattern, and is likely the expected behavior of the service. If you're familiar with behavioral economics, default behaviors have a surprising impact. It's smart to align the default behavior with the option that fits user expectations and improves usability and engagement. Also, note that a poll might reflect more extreme views (sample selection bias). I would suggest interpreting the results with that in mind.
