I was in the same situation some year ago. But after some minor changes these are programs that I install on every Mac that I use for work:

Spectacle: (very)^n better windows management;
iTerm2: better terminal app;
VS Code: for all my development jobs;
Sublime Text: another code editor for simple files and quick edit (because It's lighter that VSC);
AppCleaner: to uninstall apps and get rid of all associated files;
Termius: SSH client to organize all servers that I use;
Firefox and Brave :.... I don't like Chrome and Safari it's horrible;
Handbrake: convert video file, very useful to convert video and upload them on website and apps;
