CentOS is stable as a rock. Fedora is edge and stable too (from my own experience).
You will never fill the lack of packages or support or documentation if you will choose RHEL or RHEL based distros.

Things that you will use for web development won't change much, and will be stable. The tools that you would use (unless something very specific) is available for pretty much every distro that you can think of.
And as far as stability of OS is concerned, unless you do something really drastic, you would be able to use any distro without an issue. Pro Tip: always mount your /home on a separate partition.
