You are an inspirational personality. You just need to take small selfish steps without any proper goals in mind. Because when we have a certain goal or expectation in mind, we do work for that hard but if that goal isn't achieved, we are bound to give up. We feel betrayed.
Just like your writings, do it for yourself without any expectations. Just think about how you can improve the process and aftermath a little bit more time by time.
After a consistent period of this video making process, you won't have to work soo hard to get started. You will always be in the flow of creation. Then you will just need to be able to think about the subject. Things will be much easier.
Just publish the content and improve on that.
Faulty steps taken towards progression is better than no steps taken.

No don't quit and I feel you're being too hard on yourself.
Take it easy, you could film for 20min take a long break and continue again. Then we editing join the two sessions as one.
