I used to do the same until a little while ago (in the year 2020) when I found out about Mock Servers on Postman, which gets running in a few seconds. I was surprised at the ease of doing it and have been using it ever since. You should try it out. (Ref: https://learning.postman.com/docs/designing-and-developing-your-api/mocking-data/setting-up-mock/) Fast forward to April '21: I was looking for a switch and co-incidentally, I joined Postman 🚀, in the same team that owns mock servers as a feature. So, now I'm using it and building it at the same time 😂

Hey, I think sticky sessions is something that NGINX Plus offers at the moment. However, I've not really worked with NGINX Plus (as it's not free).
