Data gravity is indeed a problem (that's why stateless apps and services are easier to containerize) but luckily there are a couple of options: from leveraging distributed filesystems such as GlusterFS to Flocker and REX-Ray to—esp. popular in the cloud—NFS or CIFS mounts.
Yup, totally agreed re service discovery—unfortunately the polls are limited to 4 options ;) However, I'm very much aware of the challenges in this area and that's also partially the reason I wrote the free O'Reilly book on Docker Networking and Service Discovery .
