I run a base Mac Mini at my day job with 3 monitors attached and it's fine. Spotlight indexing caused me some trouble on initial setup - it was really, really slow, but after disabling it, it was fine. I don't use Spotlight much, but maybe one night, i'll turn it back on and let it index over night. Runs Photoshop and Illustrator just fine also.
