It would be easier if you explain what project you are looking to build, then looking at the differences between MongoDB and CouchDB rather than making a blanket statement saying CouchDB is better for all CRM systems.
The major of advantage of CouchDB seems to be the Master-Master replication which means data is consistent across all nodes. Otherwise I see very little benefit of one over the other.
