I'm thinking about using it to build a backend and complete a certain mobile app which has been delayed over the years due to a lack of resources.

Hey David! It's amazing you were able to learn something from this and get ideas for new projects. On the API's, Amplication offers both GraphQL and REST API as options. Since I was doing a demonstration of the tool, that was a very important step I had to show. You're free to use whichever you feel comfortable with.
