Hi! About your first question, if you mean doing interviews for a japanese company from a foreign country, yes, it can be done and it's recommended as the best to enter Japan is with a job already, as that will grant you a working visa.
About remote work, I would say that most japanese companies expect workers to go everyday to the office, but with the pandemic of course they had to allow working from home everyday. I'm not sure if remote will stay in the future, but the truth is that I have been working remotely all my time in Japan.
