What are the pros and cons of a cryptocurrency having a limited supply vs an increasing supply?

Bitcoin is capped at 21 million units whereas I have seen so many other cryptocurrencies which have, say an unlimited supply or even a supply which increases yearly. How does this work, and how do you judge which one is better?
