What is Restful web service and in what context do we use this?

Problem I have: I am learning ReactJS and I wanted to make API calls to the Collins dictionary and it says it works on the principle of Restful.

Should the RESTful JSON API contain multiple arrays, or is that bad?

If I choose to expose only simple data without array .. then the client is responsible for joining data between multiple endpoint of restful api ?
